- 4 Russet potatoes, diced
- 4 tablespoons unsalted butter
- 1 sweet onion, diced
- 2 cups cooked corned beef, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Kosher salt, to taste
- Black pepper, to taste
Instructions
- Boil diced russet potatoes until fork-tender, about 5 to 10 minutes.
- Drain the potatoes thoroughly.
- Melt butter in a large skillet over medium heat.
- Add boiled potatoes, diced onion, kosher salt, and black pepper to the skillet. Mix well and cook for 8 to 10 minutes.
- Cook until the onions are translucent and the edges are golden.
- Add chopped corned beef, garlic powder, and onion powder. Stir until well combined.
- Press the mixture into an even layer in the skillet.
- Cook undisturbed for 3 to 5 minutes until a golden crust forms on the bottom.
- Flip the hash, adding 2 more tablespoons of butter before pressing down.
- Repeat the flipping process until desired crispiness is achieved.
Notes
For a healthier version, substitute sweet potatoes for russet potatoes and use olive oil instead of butter.
