Description

A nostalgic and satisfying comfort food combining crispy potatoes, savory corned beef, and sweet caramelized onions.


Ingredients

  • 4 Russet potatoes, diced
  • 4 tablespoons unsalted butter
  • 1 sweet onion, diced
  • 2 cups cooked corned beef, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Boil diced russet potatoes until fork-tender, about 5 to 10 minutes.
  2. Drain the potatoes thoroughly.
  3. Melt butter in a large skillet over medium heat.
  4. Add boiled potatoes, diced onion, kosher salt, and black pepper to the skillet. Mix well and cook for 8 to 10 minutes.
  5. Cook until the onions are translucent and the edges are golden.
  6. Add chopped corned beef, garlic powder, and onion powder. Stir until well combined.
  7. Press the mixture into an even layer in the skillet.
  8. Cook undisturbed for 3 to 5 minutes until a golden crust forms on the bottom.
  9. Flip the hash, adding 2 more tablespoons of butter before pressing down.
  10. Repeat the flipping process until desired crispiness is achieved.

Notes

For a healthier version, substitute sweet potatoes for russet potatoes and use olive oil instead of butter.
