- 4 Eggs
- 1 cup Full-Fat Cottage Cheese, drained and blended
- 1 tsp Baking Powder
- Optional Seasonings: garlic powder, herbs, vanilla
Instructions
- Remove eggs from the refrigerator 30 minutes before starting. Drain cottage cheese for 10 minutes. Preheat oven to 150°C (300°F) and prepare a baking sheet lined with parchment paper.
- Separate eggs, placing egg whites in a mixing bowl. Blend cottage cheese until smooth and fold in egg yolks with seasoning.
- Beat egg whites until foamy, then add baking powder and beat until stiff peaks form.
- Fold one-third of the whipped egg whites into the yolk-cottage cheese mixture, then fold in the remaining whites.
- Dollop spoonfuls of the batter onto prepared circles on the baking sheet and bake for 25 minutes or until golden.

Consider using low-sugar options or dairy-free substitutes like silken tofu for the cottage cheese.
