Description

A delightful blend of apple fritters and freshly baked bread, this Country Apple Fritter Bread is perfect for breakfast, snacks, or dessert.


Ingredients

  • 1/3 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 2 apples, peeled and chopped
  • 2/3 cup granulated sugar plus 2 tablespoons
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk plus 1 to 3 tablespoons
  • 1/2 cup powdered sugar
  • A pinch of salt
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with nonstick cooking spray.
  2. In a small bowl, mix together the light brown sugar and ground cinnamon. Set aside.
  3. Toss the chopped apples with 2 tablespoons of granulated sugar and set them aside.
  4. In a large mixing bowl, cream together the softened butter and remaining granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients.
  8. Spread half of the batter into the prepared loaf pan, sprinkle with half of the cinnamon sugar mixture, and layer half of the chopped apples on top. Repeat with the remaining batter, cinnamon sugar, and apples.
  9. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. Drizzle powdered sugar mixed with milk over the cooled bread before slicing and serving.

Notes

Serve warm or at room temperature. Pairs well with vanilla ice cream or cream cheese.
