Description

A luxurious dish featuring salmon fillets stuffed with a rich mixture of crab, shrimp, and creamy Boursin cheese, perfect for special occasions or weekend dinners.


Ingredients

  • 4 salmon fillets (skin removed)
  • 8 oz lump crab meat
  • 12–16 medium shrimp (peeled and cleaned)
  • 1 pack Boursin Shallot & Chive cheese
  • 2 tablespoons olive oil
  • 4 oz frozen spinach (thawed)
  • 1 jalapeno (diced)
  • 1/4 cup grated parmesan cheese
  • Salt and ground pepper (to taste)
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning
  • 2 teaspoons garlic (minced)
  • 2 tablespoons unsalted butter (melted)
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Drizzle salmon fillets with olive oil and season with salt, ground pepper, smoked paprika, and Cajun seasoning. Make slits on top to create pockets for stuffing.
  3. In a medium bowl, combine spinach, Boursin cheese, jalapeno, crab meat, parmesan, and garlic. Mix until fully incorporated.
  4. Gently stuff each salmon fillet with the crab mixture and place shrimp on top.
  5. Drizzle melted butter over each fillet.
  6. Bake for 15-17 minutes until salmon flakes easily with a fork and shrimp is tender.
  7. Squeeze fresh lemon juice over the salmon before serving.

Notes

Ensure seafood is fresh for the best flavor. Avoid overcooking; salmon should reach 145°F (63°C).
