- 4 salmon fillets (skin removed)
- 8 oz lump crab meat
- 12–16 medium shrimp (peeled and cleaned)
- 1 pack Boursin Shallot & Chive cheese
- 2 tablespoons olive oil
- 4 oz frozen spinach (thawed)
- 1 jalapeno (diced)
- 1/4 cup grated parmesan cheese
- Salt and ground pepper (to taste)
- 1/2 teaspoon smoked paprika
- 1 teaspoon Cajun seasoning
- 2 teaspoons garlic (minced)
- 2 tablespoons unsalted butter (melted)
- Juice of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Drizzle salmon fillets with olive oil and season with salt, ground pepper, smoked paprika, and Cajun seasoning. Make slits on top to create pockets for stuffing.
- In a medium bowl, combine spinach, Boursin cheese, jalapeno, crab meat, parmesan, and garlic. Mix until fully incorporated.
- Gently stuff each salmon fillet with the crab mixture and place shrimp on top.
- Drizzle melted butter over each fillet.
- Bake for 15-17 minutes until salmon flakes easily with a fork and shrimp is tender.
- Squeeze fresh lemon juice over the salmon before serving.
Notes
Ensure seafood is fresh for the best flavor. Avoid overcooking; salmon should reach 145°F (63°C).
