Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups fresh cranberries
  • 1 cup granulated sugar (for the filling)
  • 3 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cream together butter, 1/2 cup granulated sugar, and 1/4 cup powdered sugar until fluffy.
  3. Gradually blend in the flour and salt, then press dough into the bottom of the prepared baking dish.
  4. Bake for 20 minutes or until lightly golden.
  5. In another bowl, mix cranberries, 1 cup granulated sugar, eggs, lemon juice, and lemon zest.
  6. Pour the cranberry mixture over the baked crust.
  7. Bake for an additional 25-30 minutes, or until the filling is set.
  8. Let cool completely, dust with powdered sugar, and slice into bars.
