A gooey and warm grilled cheese sandwich that melds the creaminess of ripe avocado with perfectly melted cheese, perfect for both kids and adults.

- 4 slices of sourdough bread (or your choice)
- 1 ripe avocado
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 2 tablespoons softened butter
- 1 tablespoon mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup fresh basil leaves (optional)
Instructions
- Preheat a skillet over medium heat.
- Mash the ripe avocado in a bowl until smooth, seasoning with salt and pepper.
- In another bowl, combine the mozzarella and cheddar cheeses.
- Butter one side of each bread slice and spread mayonnaise on the unbuttered side of two slices.
- Place the mayo-side-down slices into the skillet and spread the mashed avocado evenly over each slice.
- Sprinkle garlic and onion powder over the avocado.
- Top with the cheese blend and add fresh basil if desired.
- Close sandwiches with the remaining bread slices, buttered side up.
- Grill for 3-4 minutes per side until golden brown and cheese is melted.
- Let rest briefly before slicing and serving warm.
Notes
For a healthier twist, substitute with low-sugar bread or dairy-free cheese.
