Ingredients

- 1 cup macaroni
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional: Chopped parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
- Stir in the shredded chicken and heat through for a couple of minutes.
- Pour in the chicken broth and bring to a boil.
- Once boiling, add the macaroni and cook until al dente, about 7-8 minutes.
- Reduce heat and stir in the milk and shredded cheddar cheese until melted.
- Season with salt and pepper to taste and serve hot, garnished with chopped parsley.
Notes
Use rotisserie chicken for quicker preparation. You can also mix different cheeses for added flavor.
