Description

A comforting soup filled with rich cheesy goodness and hearty chicken, perfect for quick dinners.


Ingredients

  • 1 cup macaroni
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: Chopped parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
  3. Stir in the shredded chicken and heat through for a couple of minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Once boiling, add the macaroni and cook until al dente, about 7-8 minutes.
  6. Reduce heat and stir in the milk and shredded cheddar cheese until melted.
  7. Season with salt and pepper to taste and serve hot, garnished with chopped parsley.

Notes

Use rotisserie chicken for quicker preparation. You can also mix different cheeses for added flavor.
