A comforting and indulgent creamy garlic parmesan dish featuring tender chicken, cheese tortellini, and fresh broccoli, perfect for weeknight dinners.

- 2 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 2 tablespoons olive oil, divided
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 10 oz package cheese tortellini
- 2 cups fresh broccoli florets
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Season both sides of the chicken breasts with salt and black pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and sear until golden brown and cooked through, about 6-7 minutes per side. Remove chicken from the skillet and set aside. Let it rest for about 5 minutes before slicing into thin strips.
- In the same skillet, add the remaining tablespoon of olive oil. Reduce the heat to medium and add the minced garlic, sautéing for about 1 minute until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
- Add the grated Parmesan cheese and Italian seasoning. Stir continuously until the cheese melts and the sauce thickens slightly. Lightly season with salt and pepper as needed.
- While the sauce simmers, bring a pot of water to a boil. Cook the tortellini according to package instructions. In the last 2 minutes of cooking, add the broccoli florets to blanch them until tender.
- Drain the tortellini and broccoli, and add them directly to the skillet with the sauce. Stir well to coat.
- Add the sliced chicken on top of the tortellini mixture. Warm everything through over low heat.
- Serve immediately, garnishing with fresh parsley if desired.
Notes
For a healthier version, substitute light cream for heavy cream, use whole grain tortellini, or replace chicken with grilled shrimp or sautéed mushrooms.
