Description

A comforting and indulgent creamy garlic parmesan dish featuring tender chicken, cheese tortellini, and fresh broccoli, perfect for weeknight dinners.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 10 oz package cheese tortellini
  • 2 cups fresh broccoli florets
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Season both sides of the chicken breasts with salt and black pepper.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and sear until golden brown and cooked through, about 6-7 minutes per side. Remove chicken from the skillet and set aside. Let it rest for about 5 minutes before slicing into thin strips.
  3. In the same skillet, add the remaining tablespoon of olive oil. Reduce the heat to medium and add the minced garlic, sautéing for about 1 minute until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  5. Add the grated Parmesan cheese and Italian seasoning. Stir continuously until the cheese melts and the sauce thickens slightly. Lightly season with salt and pepper as needed.
  6. While the sauce simmers, bring a pot of water to a boil. Cook the tortellini according to package instructions. In the last 2 minutes of cooking, add the broccoli florets to blanch them until tender.
  7. Drain the tortellini and broccoli, and add them directly to the skillet with the sauce. Stir well to coat.
  8. Add the sliced chicken on top of the tortellini mixture. Warm everything through over low heat.
  9. Serve immediately, garnishing with fresh parsley if desired.

Notes

For a healthier version, substitute light cream for heavy cream, use whole grain tortellini, or replace chicken with grilled shrimp or sautéed mushrooms.
