Ingredients

  • 2 lbs potatoes, peeled and cubed

  • 1/2 cup milk (for mashed potatoes)

Instructions

  1. Boil the potatoes in a large pot until tender, about 15-20 minutes. Drain and mash with 4 tablespoons butter and 1/2 cup milk. Season with salt and pepper to taste.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds to 1 minute.
  3. Introduce the shrimp and cook, turning until pink and opaque, about 3-4 minutes per side.
  4. Pour in the heavy cream, stir to combine, and simmer until the sauce thickens slightly. Season with salt and pepper.
  5. Serve the creamy garlic shrimp over the mashed potatoes and garnish with chopped parsley.
