Ingredients

  • 2 chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 packs ramen noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup mushrooms, sliced
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a pot, heat a little oil over medium heat. Once warm, add the minced garlic and ginger, stirring until fragrant—about 1 minute.
  2. Add the sliced mushrooms to the pot and cook until soft and golden brown for approximately 3-4 minutes.
  3. Add the chicken breasts to the pot. Cook for about 5-7 minutes, turning occasionally, until browned on both sides.
  4. Pour in the chicken broth and bring to a simmer. Cover and cook until the chicken is thoroughly cooked, around 10-15 minutes.
  5. Remove the chicken breasts from the pot, shred them, and return to the pot.
  6. Stir in the heavy cream and soy sauce until combined and thickened.
  7. In a separate pot, cook the ramen noodles according to package instructions. Drain and add them to the pot with the creamy sauce.
  8. Taste and season with salt and pepper as needed.
  9. Serve hot, garnished with chopped green onions.

Notes

For added flavor, consider using homemade chicken broth and incorporating vegetables such as spinach or bell peppers.
