Ingredients

  • 1 tbsp whole egg mayonnaise
  • 2 tsp Dijon mustard
  • 2 tsp finely chopped chives
  • 1/2 tsp black pepper
  • 1/4 tsp kosher salt
  • 8 slices soft white sandwich bread
  • Soft salted butter

Instructions

  1. Bring a pot of water to a gentle boil and softly lower in the eggs. Boil for precisely 8 minutes.
  2. Transfer the eggs into a bowl of cold water for about 10 minutes to cool.
  3. Gently tap the base of each egg against a hard surface and peel from the bottom.
  4. Place the peeled eggs in a bowl, mash them with a fork, then use a potato masher for smoothing.
  5. Add mayonnaise, Dijon mustard, chives, black pepper, and salt; stir gently until combined.
  6. Spread soft salted butter on one side of each slice of bread.
