- 4 boneless skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 1 tsp. dried oregano
- 3 Tbsp. butter
- 3 cloves garlic, minced
- 1 1/2 cups cherry tomatoes, halved
- 3 cups baby spinach
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan
- Lemon wedges, for serving
Instructions
- In a skillet over medium heat, drizzle in the olive oil and allow it to warm. Add the seasoned chicken breasts, sprinkled with salt, pepper, and oregano, cooking until browned on both sides, about 8 minutes per side.
- Remove the chicken and set aside as you melt butter in the same skillet. Add minced garlic, stirring until fragrant, about 1 minute.
- Introduce cherry tomatoes, sprinkle with salt and pepper, and let them cook until they burst and release their juices.
- Add baby spinach, allowing it to wilt, then pour in the heavy cream and Parmesan cheese, simmering until slightly thickened, about 3 minutes.
- Return the chicken to the skillet and heat through for another 5 to 7 minutes.
- Serve with a wedge of lemon, squeezing juice over the top before enjoying.
