Description

Ingredients

  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar (plus extra for topping)
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1 cup graham cracker crumbs
  • 4 tablespoons melted butter

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Line a muffin tin with 12 cupcake liners.
  3. In a bowl, mix graham cracker crumbs with melted butter until well combined.
  4. Press the mixture into the liners and bake for about 5 minutes to set.
  5. In a mixer, beat cream cheese and sugar until smooth.
  6. Incorporate the eggs one at a time, then add heavy cream and vanilla extract, mixing until fully combined.
  7. Pour the batter into the liners, not overfilling.
  8. Bake for 18–20 minutes until the centers are slightly jiggly.
  9. Let them cool completely.
  10. Refrigerate for at least 3 hours.
  11. Before serving, sprinkle sugar on top of each cupcake.
  12. Use a kitchen torch to melt the sugar until caramelized.
  13. Serve immediately and enjoy!

Notes

Use room temperature ingredients for a smoother batter. If you don’t have a torch, broil to caramelize the sugar topping, watching closely to avoid burning.
