- 2 tablespoons melted butter
- 2 eggs, lightly beaten
- 1/4 cup milk
- 1/2 cup all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup grated sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- Kernels from 1 cob of freshly cut sweet corn
- 1 tablespoon chopped fresh chives
Instructions
- In a large bowl, combine the melted butter, milk, and eggs. Whisk until smooth and well blended.
- Add the flour, baking powder, and salt to the wet mixture. Stir until just combined.
- Gently fold in the grated cheddar, Parmesan, sweet corn kernels, and chopped chives.
- Place a skillet over medium-high heat. Add enough oil or butter to coat the bottom.
- Using a 1/2 cup scoop, pour the batter into the hot skillet. Let each fritter cook for 2-3 minutes until golden brown.
- Flip the fritter using a spatula. Cook the other side for an additional 2-3 minutes until crispy.
- Remove from the pan and continue with the remaining batter. Serve hot for best texture.
