Description

Crispy Cotton Candy Cheesecake Bombs are whimsical bites of creamy cheesecake infused with cotton candy and wrapped in a crispy coating, perfect for any occasion.


Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup finely chopped cotton candy
  • 1/2 cup mini chocolate morsels
  • 1 cup crushed graham crackers
  • 1 cup puffed rice cereal
  • 1/2 cup white chocolate, melted
  • 1 tablespoon coconut oil
  • Additional cotton candy for decoration

Instructions

  1. In a large mixing bowl, beat softened cream cheese with confectioners’ sugar and pure vanilla extract until smooth and fluffy.
  2. Gently fold in the finely chopped cotton candy until evenly blended.
  3. Scoop out portions of the mixture and roll into golf ball-sized rounds. Place on a parchment-lined baking sheet.
  4. Freeze the balls for 60 minutes to firm them up.
  5. In a microwave-safe bowl, melt white chocolate with coconut oil until smooth.
  6. Mix crushed graham crackers and puffed rice cereal in a separate bowl.
  7. Dip each chilled cheesecake ball in the melted white chocolate, letting the excess drip off. Roll in the graham cracker mixture until fully coated.
  8. Return the coated balls to the tray and freeze for another 30 minutes until set.
  9. Top each cheesecake bomb with cotton candy before serving.

Notes

Make sure to freeze the cheesecake balls adequately before dipping in chocolate for easier handling.
