Crispy Cotton Candy Cheesecake Bombs are whimsical bites of creamy cheesecake infused with cotton candy and wrapped in a crispy coating, perfect for any occasion.
Ingredients

- 1 cup cream cheese, softened
- 1/2 cup confectioners’ sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup finely chopped cotton candy
- 1/2 cup mini chocolate morsels
- 1 cup crushed graham crackers
- 1 cup puffed rice cereal
- 1/2 cup white chocolate, melted
- 1 tablespoon coconut oil
- Additional cotton candy for decoration
Instructions
- In a large mixing bowl, beat softened cream cheese with confectioners’ sugar and pure vanilla extract until smooth and fluffy.
- Gently fold in the finely chopped cotton candy until evenly blended.
- Scoop out portions of the mixture and roll into golf ball-sized rounds. Place on a parchment-lined baking sheet.
- Freeze the balls for 60 minutes to firm them up.
- In a microwave-safe bowl, melt white chocolate with coconut oil until smooth.
- Mix crushed graham crackers and puffed rice cereal in a separate bowl.
- Dip each chilled cheesecake ball in the melted white chocolate, letting the excess drip off. Roll in the graham cracker mixture until fully coated.
- Return the coated balls to the tray and freeze for another 30 minutes until set.
- Top each cheesecake bomb with cotton candy before serving.
Notes
Make sure to freeze the cheesecake balls adequately before dipping in chocolate for easier handling.
