- 1 lb carrots
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- Bring salted water to a boil and boil the carrot rounds for 10–12 minutes until fork-tender.
- Drain and cool slightly.
- Arrange the carrots in a single layer on the baking sheet.
- Smash each carrot round using the bottom of a glass or measuring cup.
- Drizzle the smashed carrots with olive oil and season with garlic powder, smoked paprika, salt, and pepper.
- Sprinkle grated Parmesan cheese over the carrots.
- Roast in the oven for 20–25 minutes, flipping halfway through until golden brown and crisp.
- Garnish with freshly chopped parsley and serve hot.
Notes
For optimal crispiness, pat the carrots dry before smashing and use a hot oven for roasting.
