Description

Transform humble carrots into a gourmet side dish with crispy smashed carrots coated in garlic powder, smoked paprika, and grated Parmesan. A delightful blend of flavors and textures that will impress at any meal.


Ingredients

  • 1 lb carrots
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. Bring salted water to a boil and boil the carrot rounds for 10–12 minutes until fork-tender.
  4. Drain and cool slightly.
  5. Arrange the carrots in a single layer on the baking sheet.
  6. Smash each carrot round using the bottom of a glass or measuring cup.
  7. Drizzle the smashed carrots with olive oil and season with garlic powder, smoked paprika, salt, and pepper.
  8. Sprinkle grated Parmesan cheese over the carrots.
  9. Roast in the oven for 20–25 minutes, flipping halfway through until golden brown and crisp.
  10. Garnish with freshly chopped parsley and serve hot.

Notes

For optimal crispiness, pat the carrots dry before smashing and use a hot oven for roasting.
