Delicious vegetarian patties made with sweet potatoes and red lentils, offering a crispy outer layer and a tender interior packed with flavor.

- 2 medium sweet potatoes, peeled and cubed
- 1 cup red lentils, rinsed
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1/2 cup fresh cilantro or parsley, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 cup panko breadcrumbs
- Salt and pepper to taste
- Olive oil for frying
Instructions
- In a medium pot, add 1 cup of red lentils and 2 cups of water. Bring to a boil over medium heat and let simmer for 15 minutes until soft. Drain and set aside.
- In a separate pot, bring salted water to a boil. Add the cubed sweet potatoes and cook until fork-tender, approximately 10-12 minutes. Drain and cool slightly.
- Heat a tablespoon of olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 5-7 minutes.
- In a large mixing bowl, mash the cooked sweet potatoes. Mix in the cooked lentils, sautéed onion and garlic, chopped herbs, ground cumin, paprika, salt, and pepper until combined.
- Shape the mixture into 2-inch patties and gently coat each with panko breadcrumbs.
- Heat olive oil in a frying pan over medium heat. Fry the patties for about 3-4 minutes per side until golden brown or bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
Notes
For extra flavor, consider adding spices like coriander or chili powder.
