Description

Delicious vegetarian patties made with sweet potatoes and red lentils, offering a crispy outer layer and a tender interior packed with flavor.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1/2 cup fresh cilantro or parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. In a medium pot, add 1 cup of red lentils and 2 cups of water. Bring to a boil over medium heat and let simmer for 15 minutes until soft. Drain and set aside.
  2. In a separate pot, bring salted water to a boil. Add the cubed sweet potatoes and cook until fork-tender, approximately 10-12 minutes. Drain and cool slightly.
  3. Heat a tablespoon of olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 5-7 minutes.
  4. In a large mixing bowl, mash the cooked sweet potatoes. Mix in the cooked lentils, sautéed onion and garlic, chopped herbs, ground cumin, paprika, salt, and pepper until combined.
  5. Shape the mixture into 2-inch patties and gently coat each with panko breadcrumbs.
  6. Heat olive oil in a frying pan over medium heat. Fry the patties for about 3-4 minutes per side until golden brown or bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.

Notes

For extra flavor, consider adding spices like coriander or chili powder.
