Description

Ingredients

  • 2 cups cake flour
  • 0.5 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 0.25 cup packed brown sugar
  • 1 tsp vanilla extract
  • 1.25 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Line a 12-cup muffin tin with liners.
  3. In a large bowl, whisk together cake flour, cocoa powder, baking powder, salt, and granulated sugar.
  4. In another bowl, whisk together whole milk, vegetable oil, eggs, brown sugar, and vanilla extract until smooth.
  5. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  6. Fold in 1 cup of the chocolate chips and reserve 0.25 cup for topping.
  7. Scoop the batter into the muffin liners, filling them almost to the top, and sprinkle with reserved chocolate chips.
  8. Bake for 5 minutes at 400°F, then reduce to 350°F (175°C) and bake for an additional 13 minutes.
  9. Allow to cool in the pan for about 5 minutes before transferring to a wire rack.

Notes

For a healthier version: substitute half of the granulated sugar with a natural sweetener, use almond or oat milk for a dairy-free option, or use gluten-free flour.
