- 0.5 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 tsp baking powder
- 0.5 tsp salt
- 1 cup whole milk
- 0.5 cup vegetable oil
- 2 large eggs
- 0.25 cup packed brown sugar
- 1 tsp vanilla extract
- 1.25 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 400°F (205°C).
- Line a 12-cup muffin tin with liners.
- In a large bowl, whisk together cake flour, cocoa powder, baking powder, salt, and granulated sugar.
- In another bowl, whisk together whole milk, vegetable oil, eggs, brown sugar, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently fold until just combined.
- Fold in 1 cup of the chocolate chips and reserve 0.25 cup for topping.
- Scoop the batter into the muffin liners, filling them almost to the top, and sprinkle with reserved chocolate chips.
- Bake for 5 minutes at 400°F, then reduce to 350°F (175°C) and bake for an additional 13 minutes.
- Allow to cool in the pan for about 5 minutes before transferring to a wire rack.
Notes
For a healthier version: substitute half of the granulated sugar with a natural sweetener, use almond or oat milk for a dairy-free option, or use gluten-free flour.
