Ingredients

  • 1 cup grated zucchini
  • 1/2 cup Dutch process cocoa powder
  • 1/2 cup sour cream
  • 1/2 cup melted butter
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Grate zucchini and squeeze out excess moisture.
  2. Whisk melted butter and sugars together until fluffy.
  3. Add eggs, vanilla, and sour cream, mixing until combined.
  4. Fold in the drained zucchini.
  5. Whisk together flour, cocoa powder, baking powder, baking soda, and salt in another bowl.
  6. Gradually add dry ingredients to wet mixture, folding gently.
  7. Fold in semi-sweet chocolate chips, reserving some for topping.
  8. Pour batter into prepared loaf pan and sprinkle remaining chocolate chips on top.
  9. Bake until edges pull away from pan and a toothpick inserted comes out with moist crumbs.
  10. Let cool before slicing.
