- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened to room temperature
- 3/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup sprinkles, plus more for topping
Instructions
- Whisk together the flour, baking powder, and salt in a medium bowl and set aside.
- In a large bowl, beat the butter and granulated sugar together on medium-high speed until light and fluffy. Add the egg and vanilla extract, and beat on high until fully combined.
- Gradually add the dry ingredients to the wet mixture, stirring on low speed until just combined. Fold in the sprinkles.
- Scoop large sections of the dough and roll them into balls. Dip the tops in more sprinkles, then place on a lined baking sheet.
- Cover and chill the dough balls in the refrigerator for at least 2 hours.
- Preheat the oven to 350°F. Arrange chilled dough balls on baking sheets, spaced about 3 inches apart.
- Bake for 12-13 minutes or until the sides are lightly brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a healthier twist, consider using a sugar alternative or whole wheat flour.
