Description

Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup sprinkles, plus more for topping

Instructions

  1. Whisk together the flour, baking powder, and salt in a medium bowl and set aside.
  2. In a large bowl, beat the butter and granulated sugar together on medium-high speed until light and fluffy. Add the egg and vanilla extract, and beat on high until fully combined.
  3. Gradually add the dry ingredients to the wet mixture, stirring on low speed until just combined. Fold in the sprinkles.
  4. Scoop large sections of the dough and roll them into balls. Dip the tops in more sprinkles, then place on a lined baking sheet.
  5. Cover and chill the dough balls in the refrigerator for at least 2 hours.
  6. Preheat the oven to 350°F. Arrange chilled dough balls on baking sheets, spaced about 3 inches apart.
  7. Bake for 12-13 minutes or until the sides are lightly brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
