Description

A delightful breakfast quesadilla filled with creamy cream cheese and fresh blueberries, perfect for starting your day on a sweet note.

Ingredients

Scale
  • 3 oz soft flour tortillas (about 2 tortillas)
  • 3 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 1 tbsp honey (or maple syrup)
  • 0.5 tsp finely grated lemon zest
  • 0.25 tsp vanilla extract
  • 1 tsp unsalted butter (for the skillet)
  • 1 tsp granulated sugar (optional, for sprinkling)
  • 0.25 tsp ground cinnamon (optional)
  • 0.125 tsp fine sea salt

Instructions

  1. Prepare your ingredients by laying them out on the countertop.
  2. Create the filling by mixing cream cheese, honey, lemon zest, vanilla extract, and sea salt. Gently fold in blueberries.
  3. Spread half of the mixture over one tortilla, then place the second tortilla on top.
  4. Melt butter in a non-stick skillet over medium heat.
  5. Cook the quesadilla for 3-4 minutes on each side until golden brown.
  6. Slice into wedges and serve with honey or powdered sugar if desired.

Notes

For a healthier version, opt for whole wheat tortillas or Greek yogurt instead of cream cheese.
