Description

Ingredients

  • ¾ cup milk
  • ¼ cup olive oil
  • 1 large egg
  • 1 teaspoon vanilla extract (optional)
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 teaspoon sea salt flakes for topping
  • ½ cup grated Parmesan cheese or shredded mozzarella (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk the milk, olive oil, egg, and vanilla extract (if using) until fully combined.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Fold in the minced garlic and chopped rosemary.
  5. Spoon the batter into the muffin cups, filling each about two-thirds full, and optionally sprinkle salt flakes or cheese over the tops.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
