Description

Delicious and crispy taquitos filled with shredded chicken and cheese, perfect for any occasion.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • Salt, to taste
  • 12 corn tortillas
  • Oil, for frying or brushing
  • Sour cream, for serving
  • Salsa, for serving
  • Pico de gallo, for serving
  • Guacamole, for serving

Instructions

  1. Heat enough oil to cover the bottom of a large skillet over medium heat until shimmering.
  2. In a bowl, combine the cooked chicken, cheddar cheese, pepper jack cheese, chili powder, garlic powder, cumin, and a pinch of salt. Mix well.
  3. Take a corn tortilla and place about 2 tablespoons of filling on the lower third. Roll tightly, tucking in the sides.
  4. Carefully place the rolled taquito seam-side down in the hot oil and fry for 3-4 minutes until golden and crispy, turning occasionally.
  5. Transfer the crispy taquitos to a platter lined with paper towels to absorb excess oil.

Notes

Warm tortillas slightly before filling to prevent cracking. Don’t overfill the tortillas to make rolling easier.
