Delicious and crispy taquitos filled with shredded chicken and cheese, perfect for any occasion.
Ingredients

- 2 cups cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- Salt, to taste
- 12 corn tortillas
- Oil, for frying or brushing
- Sour cream, for serving
- Salsa, for serving
- Pico de gallo, for serving
- Guacamole, for serving
Instructions
- Heat enough oil to cover the bottom of a large skillet over medium heat until shimmering.
- In a bowl, combine the cooked chicken, cheddar cheese, pepper jack cheese, chili powder, garlic powder, cumin, and a pinch of salt. Mix well.
- Take a corn tortilla and place about 2 tablespoons of filling on the lower third. Roll tightly, tucking in the sides.
- Carefully place the rolled taquito seam-side down in the hot oil and fry for 3-4 minutes until golden and crispy, turning occasionally.
- Transfer the crispy taquitos to a platter lined with paper towels to absorb excess oil.
Notes
Warm tortillas slightly before filling to prevent cracking. Don’t overfill the tortillas to make rolling easier.
