- 1 lb small raw shrimp, peeled and deveined
- 1 cup buttermilk
- 1 tsp hot sauce
- 1 cup all-purpose flour
- 0.33 cup cornstarch
- 0.5 cup fine cornmeal
- 0.75 cup panko breadcrumbs
- 1.5 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.25 tsp cayenne pepper
- 0.5 tsp baking powder
- 1.25 tsp kosher salt (divided)
- 0.5 tsp black pepper
- 3 cups vegetable oil (for frying)
Instructions
- Prep the Shrimp: Rinse shrimp under cold water and pat them dry with paper towels.
- Marinate: Combine buttermilk and hot sauce, mix and add shrimp. Let soak for 10-15 minutes.
- Prepare the Breading Station: Whisk flour, cornstarch, seasonings, and half of the kosher salt in a dish. Combine panko breadcrumbs and cornmeal in another.
- Coat the Shrimp: Dredge marinated shrimp in the flour mix, dip in buttermilk, and roll in the panko-cornmeal mix.
- Heat the Oil: Heat vegetable oil to 350°F (175°C) in a deep skillet.
- Fry the Shrimp: Fry shrimp in batches for 2-3 minutes until golden brown. Flip halfway through.
- Drain and Season: Remove shrimp and place on paper towel-lined plate, sprinkling with remaining kosher salt.
Notes
For best results, don’t overcrowd the pan and ensure the oil is at the right temperature for frying.
