Description

Ingredients

  • 2 cups frozen hash browns (thawed)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped (optional)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh herbs (parsley, chives, or dill), for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine hash browns, cheddar cheese, green onions, olive oil, salt, and pepper.
  3. Grease a muffin tin and press the mixture into each cup to form baskets.
  4. Bake for about 20 minutes until golden and crispy.
  5. Carefully crack an egg into each basket and season with salt and pepper.
  6. Bake again for 5-10 minutes, depending on desired doneness of eggs.
  7. Remove from muffin tin, garnish with fresh herbs, and serve immediately.
