- 2 cups frozen hash browns (thawed)
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped (optional)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 4 large eggs
- Fresh herbs (parsley, chives, or dill), for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine hash browns, cheddar cheese, green onions, olive oil, salt, and pepper.
- Grease a muffin tin and press the mixture into each cup to form baskets.
- Bake for about 20 minutes until golden and crispy.
- Carefully crack an egg into each basket and season with salt and pepper.
- Bake again for 5-10 minutes, depending on desired doneness of eggs.
- Remove from muffin tin, garnish with fresh herbs, and serve immediately.
