Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk
  • 1 cup fresh blueberries
  • 1 tablespoon melted butter (for brushing)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, whisk together the flour, baking powder, granulated sugar, and salt until well combined.
  4. Add the cold, cubed butter to the dry ingredients and work it into the flour mixture until it resembles coarse crumbs.
  5. Carefully fold in the fresh blueberries.
  6. Make a well in the center and pour in the buttermilk, gently stirring until just combined.
  7. Turn the dough onto a lightly floured surface and knead gently a few times until it comes together.
  8. Pat the dough into a rectangle about 1 inch thick and cut into desired shapes.
  9. Place biscuits on the baking sheet and brush tops with melted butter.
  10. Bake for 15-18 minutes, or until golden brown and cooked through.
  11. Remove from oven and allow to cool slightly before serving.

Notes

For a lighter version, substitute half the flour with almond flour. Frozen blueberries can be used but may require slight adjustments in baking time.
