Ingredients

- 1 and 1/2 cups old-fashioned whole rolled oats
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 3 tablespoons unsalted butter, melted
- 2/3 cup packed light or dark brown sugar
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup creamy peanut butter
- 1/2 cup regular-size M&Ms or 1/3 cup mini M&Ms
- 1/3 cup semi-sweet chocolate chips
Instructions
- In a medium bowl, whisk the oats, baking soda, and salt together until combined. Set aside.
- In a large bowl, whisk the melted butter, brown sugar, eggs, and vanilla together until well mixed.
- Whisk in the peanut butter until fully combined.
- Pour the dry ingredients into the bowl with the wet ingredients and mix until beautifully combined.
- Fold in the M&Ms and chocolate chips.
- Cover the cookie dough tightly and chill it in the refrigerator for at least 30 minutes.
- Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
- Scoop generous tablespoons of the dough and place them three inches apart on the baking sheets.
- Bake until the edges are set and golden brown, approximately 12-15 minutes.
- Let cool for 10 minutes on the baking sheet before transferring to a wire rack to cool completely.
Notes
These cookies can be stored at room temperature for up to a week. They freeze well for longer storage.
