- 2 tablespoons olive oil
- 3 cups sliced yellow onions
- 2 teaspoons fresh thyme leaves
- 1/4 teaspoon black pepper
- 1/4 teaspoon Kosher salt
- 1/4 cup low sodium chicken broth
- 2 teaspoons balsamic vinegar
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts (approximately 5 ounces each)
- 1/4 teaspoon paprika
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon black pepper
- 1/2 teaspoon Kosher salt
- 1/4 cup low sodium chicken broth
- 1 1/4 cups shredded Gruyere cheese
Instructions
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium heat. Add the sliced onions and cook for about 10-12 minutes until softened. Sprinkle in thyme, salt, and pepper, add 1/4 cup chicken broth, and cook for another 12-14 minutes. Stir in balsamic vinegar and set aside.
- Preheat oven to 375°F (190°C). In the same skillet, heat an additional tablespoon of olive oil. Season chicken breasts with paprika, thyme, salt, and pepper. Brown for 3-4 minutes on each side.
- Return the caramelized onions to the skillet with another 1/4 cup chicken broth. Bake for 8-10 minutes until chicken reaches 165°F (74°C). Top with shredded Gruyere cheese and bake for another 5 minutes until bubbly.
Notes
Serve with rice, pasta, or creamy mashed potatoes. For a lighter option, use skinless chicken thighs.
