Description

A comforting dish of tender chicken and sweet caramelized onions, topped with gooey Gruyere cheese for a soul-satisfying delight.


Ingredients

  • 2 tablespoons olive oil
  • 3 cups sliced yellow onions
  • 2 teaspoons fresh thyme leaves
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon Kosher salt
  • 1/4 cup low sodium chicken broth
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon olive oil
  • 4 boneless skinless chicken breasts (approximately 5 ounces each)
  • 1/4 teaspoon paprika
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Kosher salt
  • 1/4 cup low sodium chicken broth
  • 1 1/4 cups shredded Gruyere cheese

Instructions

  1. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium heat. Add the sliced onions and cook for about 10-12 minutes until softened. Sprinkle in thyme, salt, and pepper, add 1/4 cup chicken broth, and cook for another 12-14 minutes. Stir in balsamic vinegar and set aside.
  2. Preheat oven to 375°F (190°C). In the same skillet, heat an additional tablespoon of olive oil. Season chicken breasts with paprika, thyme, salt, and pepper. Brown for 3-4 minutes on each side.
  3. Return the caramelized onions to the skillet with another 1/4 cup chicken broth. Bake for 8-10 minutes until chicken reaches 165°F (74°C). Top with shredded Gruyere cheese and bake for another 5 minutes until bubbly.

Notes

Serve with rice, pasta, or creamy mashed potatoes. For a lighter option, use skinless chicken thighs.
