Description

Ingredients

  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar (or coconut sugar)
  • 1 cup heavy cream (or coconut cream)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Rinse the fresh raspberries under cold water and pat dry. Reserve some for garnishing.
  2. Blend raspberries, sugar, and lemon juice until smooth. Strain if desired.
  3. In a bowl, whip cream with vanilla and salt until soft peaks form.
  4. Fold raspberry puree into whipped cream gently.
  5. Spoon mousse into serving dishes and refrigerate for at least 60 minutes.
  6. Garnish with reserved raspberries just before serving.

Notes
