- 2 cups fresh raspberries
- 1/2 cup granulated sugar (or coconut sugar)
- 1 cup heavy cream (or coconut cream)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- Rinse the fresh raspberries under cold water and pat dry. Reserve some for garnishing.
- Blend raspberries, sugar, and lemon juice until smooth. Strain if desired.
- In a bowl, whip cream with vanilla and salt until soft peaks form.
- Fold raspberry puree into whipped cream gently.
- Spoon mousse into serving dishes and refrigerate for at least 60 minutes.
- Garnish with reserved raspberries just before serving.
Notes
For more intense berry flavor, add raspberry extract. Consider adding crushed biscuits for texture.
