- 2/3 cup cornmeal
- 1/3 cup self-rising flour
- 1/3 cup low-fat buttermilk
- 1 large egg
- Oil for frying
Instructions
- In a medium-sized bowl, combine the cornmeal, self-rising flour, buttermilk, and egg. Stir until well mixed.
- In a skillet over medium heat, pour about 3 tablespoons of oil.
- Drop spoonfuls of batter into the hot oil and cook for 2-3 minutes per side until golden brown.
- Remove and drain on paper towels.
- Serve hot with your favorite sides or toppings.
Notes
