Description

Ingredients

  • 2/3 cup cornmeal
  • 1/3 cup self-rising flour
  • 1/3 cup low-fat buttermilk
  • 1 large egg
  • Oil for frying

Instructions

  1. In a medium-sized bowl, combine the cornmeal, self-rising flour, buttermilk, and egg. Stir until well mixed.
  2. In a skillet over medium heat, pour about 3 tablespoons of oil.
  3. Drop spoonfuls of batter into the hot oil and cook for 2-3 minutes per side until golden brown.
  4. Remove and drain on paper towels.
  5. Serve hot with your favorite sides or toppings.
