Description

A hearty and comforting dish that combines crunchy Fritos, ground beef, vibrant green cabbage, and zesty ranch dressing.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 4 cups chopped green cabbage
  • 1 cup diced tomatoes
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned sweet corn, drained
  • 2 cups Fritos corn chips
  • 1 ½ cups shredded cheddar cheese
  • ½ cup ranch dressing or Southwest-style dressing

Instructions

  1. Heat a skillet over medium heat and brown the ground beef until cooked through; drain excess fat.
  2. Sprinkle taco seasoning over cooked beef and a splash of water; mix well and let simmer for a couple of minutes.
  3. Chop cabbage and dice tomatoes, then rinse and drain black beans and sweet corn.
  4. Layer chopped cabbage in a large serving bowl, followed by beef, black beans, corn, and diced tomatoes.
  5. Top with Fritos and shredded cheddar cheese.
  6. Drizzle with ranch or Southwest-style dressing and toss gently before serving.

Notes

For a lighter option, use ground turkey or plant-based meat and swap ranch dressing for yogurt-based dressing.
