- 225 g (1 ¼ cups) dark chocolate, chopped
- 56 g (¼ cup) butter, salted or unsalted
- 2 eggs, room temperature
- 100 g (¾ cup) granulated sugar
- 90 g (½ cup) raw sugar
- 1 teaspoon vanilla bean paste
- 85 g (½ cup) dark or milk chocolate chips
Instructions
- Preheat your oven to 320°F (160°C) and line a baking tray with parchment paper.
- Melt the dark chocolate and butter in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Stir in the vanilla bean paste.
- In another bowl, beat the eggs together with the granulated and raw sugars until thick and fluffy.
- Sift together the all-purpose flour, cocoa powder, baking powder, and salt in a separate bowl.
- Fold the melted chocolate mixture into the beaten eggs, then add the dry ingredients, combining until just mixed.
- Gently fold in the chocolate chips.
- Scoop the batter onto the prepared baking tray with space between each scoop.
- Bake for 12-14 minutes until the tops are set and slightly crackly.
- Allow to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
