Ingredients

  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 225 g (1 ¼ cups) dark chocolate, chopped
  • 56 g (¼ cup) butter, salted or unsalted
  • 2 eggs, room temperature
  • 100 g (¾ cup) granulated sugar
  • 90 g (½ cup) raw sugar
  • 1 teaspoon vanilla bean paste
  • 85 g (½ cup) dark or milk chocolate chips

Instructions

  1. Preheat your oven to 320°F (160°C) and line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Stir in the vanilla bean paste.
  3. In another bowl, beat the eggs together with the granulated and raw sugars until thick and fluffy.
  4. Sift together the all-purpose flour, cocoa powder, baking powder, and salt in a separate bowl.
  5. Fold the melted chocolate mixture into the beaten eggs, then add the dry ingredients, combining until just mixed.
  6. Gently fold in the chocolate chips.
  7. Scoop the batter onto the prepared baking tray with space between each scoop.
  8. Bake for 12-14 minutes until the tops are set and slightly crackly.
  9. Allow to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
