Description

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1214 chocolate truffles or small chunks of chocolate for the lava center

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and light brown sugar in a large mixing bowl until light and fluffy.
  3. Beat in the eggs one at a time, then add the vanilla extract and mix well.
  4. In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Scoop a portion of dough, flatten slightly, place a chocolate truffle in the center, and wrap the dough around it.
  8. Place cookies on prepared baking sheet, leaving 2 inches between each.
  9. Bake for 10-12 minutes until edges are set but center is soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Avoid overbaking for the perfect gooey center. Store in an airtight container for up to a week.
