Ingredients

- 4 slices thick-cut bread (sourdough or Italian)
- 4 tablespoons unsalted butter, softened
- 3 cloves garlic, minced
- 1 teaspoon dried parsley (or 1 tablespoon fresh parsley, finely chopped)
- 1 cup shredded mozzarella cheese
- 1 cup grated sharp cheddar cheese
- Salt and pepper to taste
Instructions
- In a small mixing bowl, combine the softened butter, minced garlic, and parsley. Season with salt and pepper to taste and mix well.
- Preheat your skillet or griddle over medium heat.
- Spread a layer of the garlic butter on one side of two bread slices. Place one slice butter-side down in the skillet.
- Top with shredded mozzarella and cheddar cheese.
- Cover with the second slice of bread, butter-side up. Cook for 3-4 minutes until golden brown.
- Carefully flip the sandwich and cook the other side for another 3-4 minutes until crispy and the cheese is melted.
- Remove from the skillet, let it rest, then slice and serve hot, optionally with marinara sauce for dipping.
Notes
Use a heavy skillet for even cooking and be generous with garlic butter for extra flavor. Allow the sandwich to rest after cooking for better texture.
