Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 tablespoons unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 10 oz fettuccine or preferred pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • Fresh parsley, chopped, for garnish
  • Extra grated Parmesan for serving

Instructions

  1. Prepare the pasta according to the package instructions, drain, and set aside.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the chicken pieces in a single layer, season with salt, pepper, Italian seasoning, and red pepper flakes. Sauté until golden brown and cooked through, about 6-8 minutes. Remove the chicken and set aside.
  4. In the same skillet, melt remaining 2 tablespoons of butter, add chicken broth and scrape up brown bits from the pan.
  5. Stir in heavy cream and bring to a simmer, cooking until slightly thickened, about 3-4 minutes.
  6. Whisk in grated Parmesan cheese until melted and combined. Adjust consistency with chicken broth or pasta water if needed.
  7. Toss the cooked pasta in the skillet until coated with the creamy sauce.
  8. Return the chicken to the skillet, tossing to combine and heat through.
  9. Taste and adjust seasoning as needed.
  10. Serve immediately, garnished with fresh parsley and extra Parmesan cheese.

Notes

For a lighter version, consider using low-fat cream or whole wheat pasta. Be careful not to overcook the chicken.
