Description

A juicy and flavorful herb and garlic butter roast turkey that elevates any holiday gathering.


Ingredients

  • 1 (12-14 lbs) whole turkey, fresh or fully thawed
  • 1 cup unsalted butter, softened
  • 6 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • 1 tbsp coarse salt
  • 1 tsp black pepper
  • 2 lemons, halved
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a mixing bowl, combine the softened butter with minced garlic, chopped rosemary, thyme, sage, salt, and black pepper. Mix until well blended and creamy.
  3. Gently loosen the skin of the turkey breast and create a pocket for the herb mixture.
  4. Scoop half of the herb butter and place it under the turkey skin, massaging for even distribution. Rub the remaining mixture over the exterior of the turkey.
  5. Stuff the cavity with the halved lemons and some extra herbs.
  6. Position the turkey on a roasting rack in a large pan and roast for approximately 13-15 minutes per pound until the internal temperature reaches 165°F (74°C).
  7. Let the turkey rest for about 20-30 minutes before carving.

Notes

Consider brining the turkey a day before roasting for added flavor and moisture. Experiment with citrus alternatives like oranges for a unique flavor.
