- 1 (12-14 lbs) whole turkey, fresh or fully thawed
- 1 cup unsalted butter, softened
- 6 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh sage, chopped
- 1 tbsp coarse salt
- 1 tsp black pepper
- 2 lemons, halved
- 2 tbsp olive oil
Instructions
- Preheat your oven to 325°F (165°C).
- In a mixing bowl, combine the softened butter with minced garlic, chopped rosemary, thyme, sage, salt, and black pepper. Mix until well blended and creamy.
- Gently loosen the skin of the turkey breast and create a pocket for the herb mixture.
- Scoop half of the herb butter and place it under the turkey skin, massaging for even distribution. Rub the remaining mixture over the exterior of the turkey.
- Stuff the cavity with the halved lemons and some extra herbs.
- Position the turkey on a roasting rack in a large pan and roast for approximately 13-15 minutes per pound until the internal temperature reaches 165°F (74°C).
- Let the turkey rest for about 20-30 minutes before carving.
Notes
Consider brining the turkey a day before roasting for added flavor and moisture. Experiment with citrus alternatives like oranges for a unique flavor.
