- 4 chicken breasts
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon dried herbs (such as thyme, rosemary, or Italian seasoning)
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup heavy cream
- 3 tablespoons butter
- 4 large carrots, peeled and cut into sticks
- 2 tablespoons honey (optional)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine minced garlic, olive oil, dried herbs, salt, and pepper. Rub mixture onto chicken breasts.
- Place the chicken on a baking tray and roast for 25-30 minutes, until cooked through.
- Boil the cubed potatoes in salted water until tender, then mash with butter and heavy cream until smooth.
- Toss carrots with olive oil and optional honey; roast them for the last 20 minutes with the chicken.
- Serve chicken with mashed potatoes and roasted carrots, garnished with fresh parsley.
Notes
Use fresh herbs for better flavor. You can prepare the garlic rub and mashed potatoes ahead of time for convenience.
