Description

Decadently buttery biscuits infused with juicy blueberries and drizzled with a sweet glaze.


Ingredients

  • 1 cup blueberries (fresh or frozen), divided
  • 3 tablespoons granulated sugar, divided
  • 2 1/2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 cups buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 cup confectioners sugar
  • 2 tablespoons whole milk

Instructions

  1. Preheat the oven to 450°F.
  2. In a small bowl, combine 3/4 cup of blueberries with 2 tablespoons of granulated sugar and set aside.
  3. In a medium bowl, whisk together 2 1/2 cups of all-purpose flour, 4 teaspoons of baking powder, and the remaining 1 tablespoon of granulated sugar.
  4. Pour 2 cups of buttermilk into the dry ingredients and stir until mostly combined.
  5. Fold in the sugar-coated blueberries.
  6. Pour 1/2 cup of melted butter into an 8×8 inch baking dish.
  7. Transfer the dough into the dish, spreading it out evenly.
  8. Score the unbaked dough into 9 squares.
  9. Top with the remaining 1/4 cup of blueberries.
  10. Bake for 30-32 minutes or until golden brown.
  11. While the biscuits bake, whisk together the confectioners sugar and whole milk to create the glaze.
  12. Let the biscuits cool before glazing.
  13. After glazing, cut into squares and serve.

Notes

For a lighter version, consider using low-sugar substitutes or whole wheat flour.
