Ingredients

- 1 cup blueberries (fresh or frozen), divided
- 3 tablespoons granulated sugar, divided
- 2 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 2 cups buttermilk
- 1/2 cup unsalted butter, melted
- 1 cup confectioners sugar
- 2 tablespoons whole milk
Instructions
- Preheat the oven to 450°F.
- In a small bowl, combine 3/4 cup of blueberries with 2 tablespoons of granulated sugar and set aside.
- In a medium bowl, whisk together 2 1/2 cups of all-purpose flour, 4 teaspoons of baking powder, and the remaining 1 tablespoon of granulated sugar.
- Pour 2 cups of buttermilk into the dry ingredients and stir until mostly combined.
- Fold in the sugar-coated blueberries.
- Pour 1/2 cup of melted butter into an 8×8 inch baking dish.
- Transfer the dough into the dish, spreading it out evenly.
- Score the unbaked dough into 9 squares.
- Top with the remaining 1/4 cup of blueberries.
- Bake for 30-32 minutes or until golden brown.
- While the biscuits bake, whisk together the confectioners sugar and whole milk to create the glaze.
- Let the biscuits cool before glazing.
- After glazing, cut into squares and serve.
Notes
For a lighter version, consider using low-sugar substitutes or whole wheat flour.
