Description

A delightful dessert that combines fresh lemon flavors with a rich, buttery cake, evoking memories of sunny Mediterranean afternoons.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup Greek yogurt
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  5. Incorporate the eggs one at a time, mixing well after each addition, then stir in the Greek yogurt.
  6. Add the fresh lemon juice and lemon zest to the mixture.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Pour the batter into the prepared cake pan and smooth the top evenly. Bake for about 30 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool the cake in the pan for about 10 minutes, then transfer to a wire rack to cool fully.
  10. For the glaze, whisk together the powdered sugar and lemon juice until smooth, then drizzle over the cooled cake.

Notes

Ensure that your butter and eggs are at room temperature. Feel free to adjust the sugar in the cake and glaze to match your personal taste preferences.
