Description

Succulent prawns enveloped in a rich, buttery garlic sauce, perfect for any occasion.


Ingredients

  • 15 kg shrimp prawns, deveined but shell and head on
  • 2 tbsp Cajun spice
  • 1 tbsp lemon pepper
  • 2 tsp salt
  • 3 tbsp olive oil
  • 250g unsalted butter
  • 10 garlic cloves, crushed
  • 34 tbsp fresh lemon juice
  • 2 tsp Cajun spice
  • 1 tsp red chili flakes
  • 1/2 cup heavy cream

Instructions

  1. Prep the prawns by deveining them if necessary.
  2. In a large mixing bowl, toss the prawns with olive oil, Cajun spice, lemon pepper, and salt.
  3. In a large pot over medium heat, melt the unsalted butter, then add garlic, lemon juice, Cajun spice, and red chili flakes. Sauté for 1-2 minutes.
  4. Gradually pour in heavy cream and let it simmer for about 5 minutes until thickened.
  5. Preheat the grill to high heat and grill the seasoned prawns for 2-3 minutes per side until coral-orange and opaque.
  6. Toss cooked prawns in the sauce immediately after grilling.
  7. Serve with sides like rice or crusty bread, alongside lemon wedges.
