Ingredients

- 15 kg shrimp prawns, deveined but shell and head on
- 2 tbsp Cajun spice
- 1 tbsp lemon pepper
- 2 tsp salt
- 3 tbsp olive oil
- 250g unsalted butter
- 10 garlic cloves, crushed
- 3–4 tbsp fresh lemon juice
- 2 tsp Cajun spice
- 1 tsp red chili flakes
- 1/2 cup heavy cream
Instructions
- Prep the prawns by deveining them if necessary.
- In a large mixing bowl, toss the prawns with olive oil, Cajun spice, lemon pepper, and salt.
- In a large pot over medium heat, melt the unsalted butter, then add garlic, lemon juice, Cajun spice, and red chili flakes. Sauté for 1-2 minutes.
- Gradually pour in heavy cream and let it simmer for about 5 minutes until thickened.
- Preheat the grill to high heat and grill the seasoned prawns for 2-3 minutes per side until coral-orange and opaque.
- Toss cooked prawns in the sauce immediately after grilling.
- Serve with sides like rice or crusty bread, alongside lemon wedges.
