Description

A vibrant wrap filled with grilled zucchini, chickpeas, feta cheese, and a herbed yogurt sauce, perfect for any occasion.


Ingredients

Scale
  • 2 medium zucchinis, sliced lengthwise
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup crumbled feta cheese
  • 4 whole wheat wraps or tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. Toss the zucchini strips with olive oil, garlic powder, salt, and pepper in a mixing bowl.
  3. Place zucchini strips on the grill and grill for 4-5 minutes on each side until tender.
  4. In another bowl, combine drained chickpeas and crumbled feta cheese.
  5. Prepare the herbed yogurt by mixing Greek yogurt, dill, parsley, lemon juice, minced garlic, and a pinch of salt.
  6. Spread herbed yogurt on a whole wheat wrap.
  7. Layer grilled zucchini strips and chickpea-feta mixture on top of the yogurt.
  8. Fold the sides of the wrap inwards and roll tightly from bottom to top.
  9. Repeat for remaining wraps and grill for an additional 2-3 minutes if desired.
  10. Slice in half before serving.

Notes

Feel free to customize with additional vegetables or proteins like grilled chicken or tofu. Best enjoyed when fresh.
