A vibrant wrap filled with grilled zucchini, chickpeas, feta cheese, and a herbed yogurt sauce, perfect for any occasion.
Ingredients

- 2 medium zucchinis, sliced lengthwise
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup crumbled feta cheese
- 4 whole wheat wraps or tortillas
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Toss the zucchini strips with olive oil, garlic powder, salt, and pepper in a mixing bowl.
- Place zucchini strips on the grill and grill for 4-5 minutes on each side until tender.
- In another bowl, combine drained chickpeas and crumbled feta cheese.
- Prepare the herbed yogurt by mixing Greek yogurt, dill, parsley, lemon juice, minced garlic, and a pinch of salt.
- Spread herbed yogurt on a whole wheat wrap.
- Layer grilled zucchini strips and chickpea-feta mixture on top of the yogurt.
- Fold the sides of the wrap inwards and roll tightly from bottom to top.
- Repeat for remaining wraps and grill for an additional 2-3 minutes if desired.
- Slice in half before serving.
Notes
Feel free to customize with additional vegetables or proteins like grilled chicken or tofu. Best enjoyed when fresh.
