- 1 tablespoon vegetable oil
- 1/4 cup soy sauce (low sodium preferred)
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 cups cooked jasmine rice
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 2 green onions, sliced
- Sesame seeds for garnish
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the ground turkey, breaking it apart with a spoon, and cook until golden brown. Season with salt and pepper.
- Remove the turkey and set it aside. In the same skillet, add the minced garlic and fresh ginger, sautéing for about 1 minute until fragrant.
- Stir in soy sauce, honey, rice vinegar, and sesame oil. Allow to simmer gently.
- Whisk in the cornstarch mixture and let it bubble for about 2 minutes until thickened.
- Toss in the broccoli, bell pepper, and carrot, cooking for about 4 minutes until tender-crisp.
- Fold the cooked turkey back into the skillet, ensuring it is coated in the sauce.
- Divide jasmine rice into serving bowls and top with the turkey and vegetable mixture.
- Garnish with green onions and sesame seeds, then serve immediately.
