- 1 cup grated apple
- 1/2 cup mashed banana
- 1/4 cup almond butter or peanut butter
- 1/4 cup honey or maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional: nuts or dried fruit
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, grated apple, mashed banana, almond butter (or peanut butter), honey (or maple syrup), cinnamon, vanilla extract, and salt. Stir until well combined.
- If desired, fold in any optional ingredients like chopped nuts or dried fruit.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a sweeter flavor, use overripe bananas. You can also experiment with different apple varieties and nut butters.
