Description

Delicious and nutritious cookies made with wholesome ingredients like oats, apple, and banana, perfect for a guilt-free snack.


Ingredients

  • 2 cups rolled oats
  • 1 cup grated apple
  • 1/2 cup mashed banana
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: nuts or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, grated apple, mashed banana, almond butter (or peanut butter), honey (or maple syrup), cinnamon, vanilla extract, and salt. Stir until well combined.
  3. If desired, fold in any optional ingredients like chopped nuts or dried fruit.
  4. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 12-15 minutes, or until the edges are lightly golden and the centers are set.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter flavor, use overripe bananas. You can also experiment with different apple varieties and nut butters.
