Description

Delicious and wholesome berry streusel bars that combine juicy berries with a crumbly oat topping, perfect for snacks or desserts.


Ingredients

Scale
  • 1 and 1/2 tablespoons cornstarch
  • 1 and 1/2 tablespoons water
  • 2 cups fresh or frozen mixed berries
  • 1/4 cup pure maple syrup
  • 1 tablespoon coconut sugar or brown sugar or granulated sugar
  • 2 and 1/2 cups old-fashioned whole rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1 cup almond butter
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil or melted butter
  • 1/2 cup sliced or chopped almonds
  • 1 extra tablespoon oats

Instructions

  1. Whisk the cornstarch and water together until smooth.
  2. Place the cornstarch mixture, mixed berries, maple syrup, and coconut sugar in a saucepan over medium heat.
  3. Stir the mixture and gently smash some berries to release their juices.
  4. Bring to a simmer and let it bubble for 2 minutes. Remove from heat and let cool completely.
  5. Preheat the oven to 350°F and line a baking pan with parchment paper.
  6. Make the crust: Pulse the oats in a food processor until coarsely ground, then combine with cinnamon, almond butter, maple syrup, applesauce, and melted coconut oil.
  7. Press most of the mixture into the pan evenly to form the base of the bars.
  8. Spread the cooled berry filling on top.
  9. Mix sliced almonds into the remaining crust mixture and sprinkle it over the top along with an extra tablespoon of oats.
  10. Bake for 27-31 minutes until the topping is golden brown.
  11. Cool completely before cutting into squares.

Notes

For freezing, layer the cooled and cut bars between sheets of parchment paper and freeze for up to 3 months.
