- Salt and pepper to taste
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 8 small corn tortillas
- 1 ripe avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix garlic powder, onion powder, ground cumin, smoked paprika, chili powder, salt, and pepper.
- Rub the chicken breasts with olive oil and coat with the spice mixture.
- Place the seasoned chicken in a baking dish and bake for 25-30 minutes until cooked through.
- Remove the chicken from the oven, let it rest, then shred it.
- In a skillet, heat the shredded chicken with salsa for about 5 minutes.
- Lightly grease a baking sheet, place corn tortillas on it, fill each with the chicken mixture, and sprinkle with cheese.
- Bake for 8-10 minutes until the cheese melts and tortillas are crispy.
- Top with diced avocado and fresh cilantro, and serve with lime wedges.
