Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 8 small corn tortillas
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix garlic powder, onion powder, ground cumin, smoked paprika, chili powder, salt, and pepper.
  3. Rub the chicken breasts with olive oil and coat with the spice mixture.
  4. Place the seasoned chicken in a baking dish and bake for 25-30 minutes until cooked through.
  5. Remove the chicken from the oven, let it rest, then shred it.
  6. In a skillet, heat the shredded chicken with salsa for about 5 minutes.
