- 2 medium zucchini
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/3 cup grated Parmesan cheese
- 1/4 cup chopped green onions or chives
- 1–2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- Grate the zucchini and sprinkle with salt, letting it sit for 10–15 minutes to draw out excess moisture.
- After resting, squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
- In a large bowl, combine the drained zucchini with eggs, flour, Parmesan cheese, green onions, garlic, salt, and pepper. Mix well until a uniform batter forms.
- Heat a skillet over medium heat and add a small amount of olive oil.
- Scoop 2 tablespoons of batter and shape it into a patty, placing it into the skillet. Repeat with remaining batter, cooking each patty for about 3–4 minutes on each side until golden brown.
- Transfer cooked fritters to a plate lined with paper towels to drain excess oil.
- Serve hot, paired with dipping sauce or yogurt as desired.
Notes
For extra crispiness, be sure to squeeze out as much moisture as possible from the zucchini. Experiment with add-ins like herbs or spices for a unique twist!
