Ingredients

  • 2 medium zucchini
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup chopped green onions or chives
  • 12 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchini and sprinkle with salt, letting it sit for 10–15 minutes to draw out excess moisture.
  2. After resting, squeeze out as much moisture as possible using a clean kitchen towel or cheesecloth.
  3. In a large bowl, combine the drained zucchini with eggs, flour, Parmesan cheese, green onions, garlic, salt, and pepper. Mix well until a uniform batter forms.
  4. Heat a skillet over medium heat and add a small amount of olive oil.
  5. Scoop 2 tablespoons of batter and shape it into a patty, placing it into the skillet. Repeat with remaining batter, cooking each patty for about 3–4 minutes on each side until golden brown.
  6. Transfer cooked fritters to a plate lined with paper towels to drain excess oil.
  7. Serve hot, paired with dipping sauce or yogurt as desired.

Notes

For extra crispiness, be sure to squeeze out as much moisture as possible from the zucchini. Experiment with add-ins like herbs or spices for a unique twist!
