- 1 pound ground beef
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 jalapeño peppers, seeded and minced
- 1 can (15 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup frozen corn
- 4 cups beef broth
- 2 teaspoons ground cumin
- 1 tablespoon chili powder
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Shredded cheddar cheese, for garnish
- Sour cream, for garnish
- Tortilla chips, for serving
Instructions
- In a large pot, heat olive oil over medium-high heat.
- Add ground beef and cook until browned.
- Add chopped onion, minced garlic, red bell pepper, green bell pepper, and jalapeños. Sauté until soft.
- Stir in diced tomatoes, black beans, kidney beans, corn, and beef broth.
- Sprinkle with ground cumin and chili powder, adding salt and pepper to taste.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Stir in cilantro and lime juice before serving.
- Serve hot, garnished with cheddar cheese, sour cream, and tortilla chips.
Notes
Adjust spice level by varying jalapeños and chili powder. Leftovers can be stored and reheated easily.
