Description

A comforting and spicy soup loaded with ground beef, beans, and veggies, perfect for chilly evenings.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 jalapeño peppers, seeded and minced
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup frozen corn
  • 4 cups beef broth
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Shredded cheddar cheese, for garnish
  • Sour cream, for garnish
  • Tortilla chips, for serving

Instructions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add ground beef and cook until browned.
  3. Add chopped onion, minced garlic, red bell pepper, green bell pepper, and jalapeños. Sauté until soft.
  4. Stir in diced tomatoes, black beans, kidney beans, corn, and beef broth.
  5. Sprinkle with ground cumin and chili powder, adding salt and pepper to taste.
  6. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  7. Stir in cilantro and lime juice before serving.
  8. Serve hot, garnished with cheddar cheese, sour cream, and tortilla chips.

Notes

Adjust spice level by varying jalapeños and chili powder. Leftovers can be stored and reheated easily.
