- 4 boneless, skinless chicken breasts
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon balsamic vinegar
- 3 cloves garlic, minced
- 1 tablespoon dried Italian herbs (oregano, basil, and thyme)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh rosemary, chopped
- Lemon slices for garnish
Instructions
- Rinse the chicken breasts under cold water and pat them dry.
- In a medium bowl, combine olive oil, lemon juice, balsamic vinegar, garlic, dried herbs, salt, and pepper to create the marinade.
- Transfer chicken to a bag or dish, pour the marinade over it, seal or cover, and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high and lightly oil the grates.
- Remove chicken from marinade, allow excess to drip off, and grill for 6-7 minutes per side or until cooked through.
- Let the chicken rest for 5 minutes, then garnish with fresh herbs and lemon slices before serving.
Notes
This dish is best served hot alongside a fresh salad or roasted vegetables. Adjust cooking time for bone-in chicken.
