Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon balsamic vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon dried Italian herbs (oregano, basil, and thyme)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Lemon slices for garnish

Instructions

  1. Rinse the chicken breasts under cold water and pat them dry.
  2. In a medium bowl, combine olive oil, lemon juice, balsamic vinegar, garlic, dried herbs, salt, and pepper to create the marinade.
  3. Transfer chicken to a bag or dish, pour the marinade over it, seal or cover, and refrigerate for at least 2 hours, preferably overnight.
  4. Preheat the grill to medium-high and lightly oil the grates.
  5. Remove chicken from marinade, allow excess to drip off, and grill for 6-7 minutes per side or until cooked through.
  6. Let the chicken rest for 5 minutes, then garnish with fresh herbs and lemon slices before serving.

Notes
