  • 2 Tablespoons Lemon Juice
  • 1 Teaspoon Lemon Zest
  • 1 Tablespoon Cold Unsalted Butter
  • 1 Large Egg (beaten with 1 Tablespoon milk for egg wash)
  • Optional Coarse Sugar for Sprinkling on Crust

Instructions

  1. Prepare the Pie Crust: Roll out one disc of chilled dough on a floured surface to create a 12-inch circle and place it into your pie dish.
  2. Mix the Filling: In a bowl, combine blueberries, sugar, flour, cornstarch, cinnamon, lemon juice, and lemon zest. Stir gently until mixed and let it sit to absorb flavors.
  3. Preheat the Oven: Preheat your oven to 425°F.
  4. Assemble the Pie: Pour the filling into the prepared crust and dot with butter cubes.
  5. Create the Lattice: Roll out the second disc, cut into strips, and arrange in a lattice pattern over the filling. Seal edges tightly.
  6. Add the Finishing Touches: Brush lattice with egg wash and sprinkle coarse sugar over the crust.
  7. Bake the Pie: Bake at 425°F for 25 minutes, then reduce to 375°F and bake for another 40-50 minutes until bubbling and golden.
