Description

A comforting and indulgent treat, Homemade Monkey Bread features gooey, buttery chunks of sweet dough kissed with cinnamon, perfect for family gatherings or cozy weekends.


Ingredients

  • 1 and 1/2 cups whole milk, warmed to about 110°F
  • 2 and 1/4 teaspoons Platinum Yeast from Red Star
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/3 cup unsalted butter, melted and slightly cooled
  • 1 teaspoon salt
  • 5 cups all-purpose flour
  • 3/4 cup unsalted butter, divided
  • 1 and 1/4 cups granulated sugar
  • 1 Tablespoon ground cinnamon
  • 2/3 cup packed light or dark brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup confectioners’ sugar
  • 3 Tablespoons whole milk
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. In the bowl of your stand mixer, whisk the warm milk, yeast, and sugar together. Allow the mixture to sit for 5 minutes until it becomes frothy.
  2. Add the eggs, melted butter, salt, and 1 cup of flour. Beat on low speed for 30 seconds. Gradually add the remaining flour, beating on medium speed until the dough begins to come together, about 2 minutes.
  3. Knead the dough for 5-7 minutes. If it becomes too sticky, sprinkle flour, 1 teaspoon at a time.
  4. Lightly grease a large bowl. Place the dough in the bowl, cover it with a clean towel, and allow it to rise in a warm environment for 1-2 hours or until it doubles in size.
  5. Generously grease a 10-12 cup Bundt pan to ensure easy release.
  6. Melt 1/2 cup of unsalted butter and mix together granulated sugar and cinnamon in a bowl.
  7. After punching down the dough, divide it into pieces, rolling them into balls about 1.25 inches in diameter. Dip each ball in the melted butter, then roll in the cinnamon-sugar mixture. Arrange the balls in the Bundt pan, cover, and allow to rest for 20 minutes.
  8. Preheat your oven to 350°F.
  9. Melt the remaining butter, then whisk in brown sugar and vanilla extract. Pour this mixture over the arranged dough balls.
  10. Bake for 35-45 minutes or until the top is golden brown and the dough is cooked through.
  11. Allow to cool for 5-10 minutes before inverting onto a serving plate.
  12. Whisk together icing ingredients and drizzle generously over the Monkey Bread.

Notes

For a dairy-free option, use almond or oat milk instead of whole milk and coconut oil instead of butter. You can also try low-sugar alternatives like stevia.
