Ingredients
Scale
- 1 and 1/2 cups whole milk, warmed to about 110°F
- 2 and 1/4 teaspoons Platinum Yeast from Red Star
- 1/4 cup granulated sugar
- 2 large eggs
- 1/3 cup unsalted butter, melted and slightly cooled
- 1 teaspoon salt
- 5 cups all-purpose flour
- 3/4 cup unsalted butter, divided
- 1 and 1/4 cups granulated sugar
- 1 Tablespoon ground cinnamon
- 2/3 cup packed light or dark brown sugar
- 1 teaspoon pure vanilla extract
- 1 cup confectioners’ sugar
- 3 Tablespoons whole milk
- 1/2 teaspoon pure vanilla extract
Instructions
- In the bowl of your stand mixer, whisk the warm milk, yeast, and sugar together. Allow the mixture to sit for 5 minutes until it becomes frothy.
- Add the eggs, melted butter, salt, and 1 cup of flour. Beat on low speed for 30 seconds. Gradually add the remaining flour, beating on medium speed until the dough begins to come together, about 2 minutes.
- Knead the dough for 5-7 minutes. If it becomes too sticky, sprinkle flour, 1 teaspoon at a time.
- Lightly grease a large bowl. Place the dough in the bowl, cover it with a clean towel, and allow it to rise in a warm environment for 1-2 hours or until it doubles in size.
- Generously grease a 10-12 cup Bundt pan to ensure easy release.
- Melt 1/2 cup of unsalted butter and mix together granulated sugar and cinnamon in a bowl.
- After punching down the dough, divide it into pieces, rolling them into balls about 1.25 inches in diameter. Dip each ball in the melted butter, then roll in the cinnamon-sugar mixture. Arrange the balls in the Bundt pan, cover, and allow to rest for 20 minutes.
- Preheat your oven to 350°F.
- Melt the remaining butter, then whisk in brown sugar and vanilla extract. Pour this mixture over the arranged dough balls.
- Bake for 35-45 minutes or until the top is golden brown and the dough is cooked through.
- Allow to cool for 5-10 minutes before inverting onto a serving plate.
- Whisk together icing ingredients and drizzle generously over the Monkey Bread.
Notes
For a dairy-free option, use almond or oat milk instead of whole milk and coconut oil instead of butter. You can also try low-sugar alternatives like stevia.
